"Coffee, like wine takes on individual characteristics from its particular growing region. Because each green coffee is unique, it requires different roasting methods. From harvest to harvest each crop of green coffee can vary, so first I must taste our green beans before we purchase them from our importers. To remember how each of my coffees should taste is one of the most important skills I have acquired over the years as a coffee roaster".
